Salad Jars

INGREDIENTS: (MAKES APPROX 5 JARS)

Salad:

  • 3x capsicum
  • ½ x avocado
  • ½ x red onion
  • 2x small heads of cos lettuce
  • ½ Telegraph
  • 1x punnet cherry tomatoes 
  • 1x can of drained chickpeas 

Dressing:

  • 2 Tbsp balsamic vinegar
  • 2 Tbsp olive oil
  • 1 tsp honey
  • 2 tsp dijon mustard 
  • Salt, to taste 

Protein ideas:

  • Shredded chicken 
  • Canned tuna 
  • Salmon 
  • Crispy tofu 

Optional Toppings:

  • Sunflower seeds
  • Feta 

DIRECTIONS

Cut the salad ingredients into bite-sized pieces and stack them in glass jars.

Make your preferred protein and dressing.

When serving, pour out the contents of the jar, then add the dressing, protein, and any extras. Enjoy your meal!
